Borage

Clouds of blue borage are now suspended over our vegetable beds, with an orchestra of bees in residence.

Borage flowers are vivid in salads. You often see them preserved in ice cubes, good for dressed Pimms and lemonade. Herbed cream cheese benefits from a dash of blue too.

When you pick the flowers, remove the pistils and stamens to get the best of their cucumber flavour.
