Now is the time to pick the unripe elderberries for pickling. Pick the upturned branches (when the heads drop, the berries will have ripened). The berries will still be green, the stalks slightly red. Remove the berries from their stems and salt them for three weeks. Then bottle with cider vinegar for for six weeks. Approximate quantites are, for 1kg of elderberries use 300g salt and 1 litre Irish apple cider vinegar.
